Jalapeno Popper Chicken


Jalapeno Popper Chicken is an original recipe inspired by my sweet baby! When I was pregnant with him I found a whole new love for jalapeno poppers and could not get enough. I had to find a way to turn it into a healthy meal, so here it is!
Ingredients:
  • 4 boneless skinless chicken breasts, halved
  • 5 oz cream cheese, softened
  • Pickled Jalapenos (about 1/3 cup, depending on how spicy you want it)
  • 1/2 cup flour
  • 1 tsp each parsley and basil
  • S & P

Diretions:

Preheat oven to 375.

Pound out each chicken breast half to 1/4 inch thickness. Spread about a TBSP of cream cheese on the chicken breasts, top with jalapenos, and roll up starting at the wide end. Secure with Toothpicks. Salt and pepper each piece of chicken.

Combine flour, parsely, and basil. Dip each chicken breast into flour mixture, then brown up in a pan over medium-high heat. Bake atg 375 for 20 - 30 minutes. Time depends on size of chicken breast. It will need to reach 165 on a thermometer.
